I've been eating eggs like it was my job lately. Chicken eggs have every essential amino acid and the all important choline, as well as a host of other amazing nutrients. Also, pasture-raised eggs, which I eat almost exclusively, are a great source of omega 3 fatty acids. Of course, it's important to eat the yolk as well as the white to get all the nutrients.
So here is a list of ways I've been eating them so that I can get variety in my 5 or 6 eggs a day!
Over-easy with hot sauce (my favorite brand at the moment is Valentina)
Poached eggs with sauteed asparagus or Brussels sprouts
Deviled eggs:
with horseradish
with sriracha, soy sauce, mayo, and ginger
with Greek yogurt, grainy mustard, and pickles
Tuna salad with hard boiled eggs added
Omelets with any combination of the normal ingredients, like ham, cheddar, chevre, spinach, onions, etc.
Eggs baked in muffin tins with ham or Canadian bacon and cheese
Custard or flan (although it's not a great idea to consume too much sugar while trying to conceive or during pregnancy)
